Chicken Rice Bowl

Quick, easy, and bursting with flavor – this is a weeknight favorite that’s too good to miss! When it’s too cold to grill, grab your cast iron and let’s get cooking.
Servings: 4
Ingredients:
• 4 chicken breasts (skin-on)
• Lillie’s Q BBQ rub (Hot Chicken Seasoning) or seasoning of your choice
• 2 cups white rice, cooked
Optional Bowl Add-Ons (perfect for using what you have on hand):
• Fresh avocado
• Roasted tomatoes
• Roasted peppers
• Roasted sweet potatoes
• Black beans, drained
• Cucumbers, peeled and sliced
To Finish:
• Drizzle with Terrapin Ridge Bang Bang sauce or your favorite sauce.
Step by Step Instructions
Chicken (Adapted from Barley & Sage):
1. Preheat your oven to 425°F.
2. Pat chicken breasts dry with a paper towel and season generously on both sides with Hot Chicken seasoning.
3. Heat a cast iron skillet over medium heat with just enough oil to coat the bottom.
4. Sear chicken breasts on one side for 5 minutes. Flip and immediately transfer the skillet to the oven.
5. Bake for 10–15 minutes, or until the chicken is fully cooked. Use an instant-read thermometer like the Thermapen to check for doneness – aim for 160–162°F as the chicken will continue to cook while resting.
6. Rest the chicken for 5–10 minutes before slicing. Always slice against the grain for the juiciest results.
Assemble the Bowl:
1. Start with a generous scoop of rice as the base.
2. Top with sliced chicken and your choice of add-ons for a vibrant, customizable meal.
3. Finish with a drizzle of Bang Bang sauce or your favorite dressing for a flavorful kick.
